History of Chocho

Chocho (L. mutabilis Sweet) has been a vital crop in traditional agricultural systems across the Andes for nearly 2,000 years, grown and revered by Pre-Incan indigenous cultures of the region. Though most indigenous Andean crops were replaced by European crops after the Spanish conquest, those living in the highlands of Peru, Bolivia, and Ecuador have continued to grow chocho and rely on it for its nutrition and nutraceutical properties

Chocho is traditionally eaten fresh after debittering, either eaten by hand, prepared in a soup or salad, or consumed as a ceviche-like street food known as ‘cevichochos’ (popular in Ecuador). It can also be made into a beverage or used in baking applications

In Ecuador, chocho is often consumed as a ceviche-like street food[1]known as 'cevichochos.' It is also eaten in soups, stews, dips and salads. More and more you can find it in grocery stores as CPG products ? including crunchy snacks, drinks, as an alternative protein (e.g., vegan sausages), or as a hummus-like dip.
